Plain pumpkin banana loaf sliced to show its orange-tan crumb

Pumpkin Banana Bread, One Loaf

Pumpkin banana bread combines ripe mashed banana and plain pumpkin puree in one gently spiced loaf. This version uses neutral oil, brown sugar and ordinary all-purpose flour, with no icing, chocolate or nuts. The result is intended to be a moist quick bread with a tender orange-tan crumb, not a cake loaded with toppings.

Measure the fruit and puree instead of guessing from the number of bananas. Both bring moisture, and extra spoonfuls change the balance of the batter. Allow about 15 minutes for preparation, roughly 65 minutes for baking and at least 60 minutes for cooling before slicing.

Ingredient choices and measurements

The recipe uses 240 g all-purpose flour, about 2 cups spooned and leveled, 200 g mashed ripe banana and 150 g plain pumpkin puree. Two medium bananas may be close to the required weight, but banana size varies. Mash first and measure the portion you need; save the rest for another use.

Choose canned pure pumpkin, not sweetened pumpkin pie filling. Pie filling may contain sugar and spices that change this loaf. Homemade puree should be thick rather than watery; a loose puree is not an exact replacement. Brown sugar, eggs and 80 ml neutral oil complete the wet mixture. Cinnamon and a small amount of ginger give a warm flavor without masking the banana.

Baking powder and baking soda are different ingredients. Use both in the listed amounts and check that they are in date. Do not compensate for old leavening with random extra spoonfuls: that can leave an unpleasant flavor without fixing the underlying problem.

The loaf pan matters

Use a light-colored metal 9-by-5-inch loaf pan, approximately 23 by 13 cm, and line it with baking parchment so two sides extend enough to lift the loaf. The batter should have room to rise; do not substitute a noticeably smaller pan and expect the same baking time. Glass and dark pans can change how quickly the outside colors relative to the center.

How to make pumpkin banana bread

1. Combine the wet ingredients

Preheat the oven to 350°F, or 175°C. Mash and weigh the banana in a large bowl. Whisk in the pumpkin, brown sugar, eggs, oil and vanilla until the mixture is evenly combined. Small soft banana flecks are fine; large chunks make the texture less consistent. Do not taste batter containing raw eggs and flour.

2. Mix the dry ingredients separately

Whisk the flour, baking powder, baking soda, cinnamon, ginger and salt in a second bowl. This distributes the leavening and seasoning before they reach the wet mixture. If measuring flour by volume, spoon it into the cup and level rather than packing it down; weighing is more consistent.

3. Fold and fill the prepared pan

Add the dry mixture to the wet mixture and fold gently until no dry flour patches remain. Stop there rather than beating the batter smooth for several minutes. Scrape into the lined pan and smooth the surface. The loaf has no topping, so do not add ingredients shown in other pumpkin bread recipes without accounting for a changed formula.

4. Bake, check the center and cool

Bake for approximately 55 to 70 minutes, checking from 55 minutes. Tent loosely with foil if the top is coloring faster than the middle cooks. A tester should show moist crumbs, not wet batter; a thin thermometer in the center gives a useful additional check around 200 to 205°F, or 93 to 96°C. Cool in the pan for 15 minutes, then lift to a rack for at least another 45 minutes, and longer if still warm.

Ingredients

  • 240 g all-purpose flour about 2 cups spooned and leveled
  • 200 g mashed ripe banana weigh after peeling and mashing; about 2 medium bananas
  • 150 g plain pumpkin puree not pumpkin pie filling

  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon fine salt

Instructions

  • Preheat to 350°F (175°C) and line a 9 by 5 inch (23 by 13 cm) metal loaf pan with parchment. Mash and weigh the banana, then whisk with pumpkin puree, brown sugar, eggs, oil and vanilla in a large bowl.

  • Fold the dry mixture into the wet ingredients just until no dry flour remains. Do not beat for several minutes. Scrape the thick batter into the prepared loaf pan and smooth the top; no toppings in this base recipe.

Check the center for no wet batter; a thin thermometer gives an additional check around 200 to 205°F (93 to 96°C). Cool 15 minutes in the pan, then at least 45 minutes on a rack, longer if still warm, before slicing into about 10 portions.

Notes

Contains wheat and eggs. Makes 1 plain loaf, about 10 slices. Use the stated pan and weighed banana/pumpkin quantities. Cook time is a 65-minute estimate within a variable range; total includes a 60-minute cooling allowance. Cool fully before wrapping.

Avoiding a gummy center

Too much puree, an undersized pan, an oven that is not fully heated and slicing before cooling can all make a moist loaf seem gummy. Keep the measured banana and pumpkin amounts, use the stated pan and check the deepest central part rather than only a shallow crack at the top. King Arthur's quick-bread doneness guide explains why time and a surface toothpick test can be insufficient.

If the center still contains raw batter, continue baking before removing the loaf. A finished brown crust cannot prove the middle is cooked. Once the loaf has cooled, cut with a serrated knife using a gentle sawing motion rather than compressing the slices.

Serving and other bakes

Serve plain, or toast an individual slice lightly after the loaf has fully cooled. For a brighter, citrus-focused bake, try lemon yogurt loaf cake. If you prefer small portions with oats and fruit, see soft apple oatmeal cookies. Those are separate recipes, not tested ingredient substitutions for this bread.

Storage and freezing

Once fully cooled, wrap the plain loaf and refrigerate in a covered container; use within 4 days and discard if there is mold or an unusual smell. For longer storage, freeze wrapped slices and thaw them in the refrigerator. Never wrap the loaf while steaming, which traps condensation against the crumb. This is a conservative storage recommendation, not a guarantee for every kitchen or ingredient brand.

Frequently asked questions

Can I replace all the banana with pumpkin?

No direct one-for-one replacement is recommended here. The sweetness, moisture and structure would change. Use a dedicated pumpkin bread formula if you do not want banana.

Can I add chocolate chips or walnuts?

They are optional changes rather than part of this plain loaf. They alter the finished product and, in the case of nuts, add allergens. Follow the base version first instead of increasing several ingredients at once.
