Use 200 ml low-sodium vegetable broth and keep 250 ml pasta cooking water in reserve. Not all the reserved water has to go into the sauce. It is a practical allowance for different puree thicknesses and pasta shapes, not a requirement to make the sauce runny.
Choosing pasta and checking labels
Rigatoni catches the smooth sauce inside its tubes, while penne or shells can also work. Follow the pasta package timing rather than assuming every shape cooks at the same speed. A gluten-free pasta may release starch and hold its shape differently, so it should not be treated as an identical substitution.
The base contains no dairy ingredients. Pasta and broth can still contain allergens or ingredients that do not match your needs, so check their labels rather than relying on a recipe title as a certification. How to make pumpkin pasta sauce without cream
1. Soften the onion and garlic
Start a pot of water for the pasta. Heat olive oil in a wide skillet over medium heat, then cook the finely chopped onion for 5 to 7 minutes until softened. Add garlic and dried sage for about 30 seconds, stirring. The onion should be tender rather than browned hard, and the garlic should smell fragrant without darkening.
2. Simmer the pumpkin base
Stir in the plain pumpkin and broth. Simmer gently for about 5 minutes, stirring across the bottom. The mixture is intentionally thick at this stage. 3. Save the cooking water before draining

The cloudy water contains starch that helps the sauce cling; plain hot water is a workable fallback but does not supply the same starch.
4. Toss and adjust the texture
Add the drained rigatoni to the skillet with 100 ml of the reserved water. Toss over low heat for 1 to 2 minutes, adding further small splashes as needed. Remove from the heat, stir in the lemon juice and taste. The sauce should coat the pasta and remain soft enough to move between the tubes. Serve soon after mixing.

Notes
Troubleshooting thick or bland sauce
If the sauce is stiff, loosen it with warm reserved water a little at a time rather than adding more oil. Pumpkin sauces thicken as they cool, so a slightly loose finish in the pan is useful. If the sauce becomes watery, stir over gentle heat briefly before serving instead of adding flour without changing the recipe.
If it tastes flat, check the salt and lemon before adding more sage. A large extra amount of dried sage can dominate the sauce. If it tastes unexpectedly sweet and strongly spiced, check whether the can was pie filling; that is an ingredient mismatch, not a problem that extra garlic can reliably correct.
