Rinse the lentils and check for any debris. Split red lentils soften and partially break down, making them useful for a thick sauce. Whole green or brown lentils keep more shape and need longer cooking; do not replace them without adjusting the method. 1. Prepare a consistent base

2. Soften and concentrate
Heat olive oil over medium heat. Cook onion and carrot for about 7 minutes, stirring regularly, until the onion is soft. Add garlic and tomato paste and stir for 1 minute. Keep the paste red rather than letting it turn black on the bottom of the pan; lower the heat if necessary.
3. Simmer until the lentils are tender
Add lentils, crushed tomatoes, stock and oregano. Bring to a gentle simmer and cook uncovered for about 20–25 minutes, stirring often. Tomato acidity and the age of lentils can lengthen cooking, so taste a cooled spoonful. The lentils should have no hard center. Add a little water if the mixture thickens before they soften.
4. Cook the pasta and combine
Cook spaghetti according to its package while the sauce finishes. Reserve a mug of pasta water before draining. Season the sauce with salt and pepper, then toss with the spaghetti, adding a splash of pasta water to loosen it. Serve promptly. Troubleshooting the sauce
Hard lentils in a very thick sauce need more liquid and more gentle cooking, not simply a hotter burner. Older lentils can take longer, especially in acidic tomatoes. Keep a small amount of hot water nearby and stir across the bottom of the saucepan to prevent sticking.
A watery sauce can simmer a little longer uncovered once the lentils are fully soft. A dry sauce after adding pasta usually needs reserved cooking water; spaghetti absorbs moisture quickly. Do not add all the reserved water at once. If a scorched layer forms, avoid scraping burnt material into the rest of the sauce; transfer the unburnt portion carefully to a clean saucepan.
Variations and serving
For a different pasta shape, choose a shape that holds thick sauce and follow its package timing. Certified gluten-free pasta and suitable stock can be used for a gluten-free variation; the noodles will behave differently when tossed and reheated. The base recipe has no dairy, but do not assume every packaged ingredient is free of milk or other allergens.
