Tomato and Egg Breakfast Appetizer

Ingredients:

  • 2 tomatoes
  • 3 eggs
  • 1/4 bell pepper (🫑)
  • 1/4 chili pepper (🌶)
  • Salt and black pepper to taste
  • Parmesan cheese (grated)
  • A small amount of vegetable oil

Instructions:

  1. Prepare the Tomatoes and Peppers:
  • Slice the tomatoes into circles.
  • Heat a skillet with a drizzle of vegetable oil.
  • Place the tomato slices and peppers (bell and chili) in the skillet.
  • Cover and cook for a few minutes, then flip to cook the other side.
  • In a separate bowl, whisk the eggs with a pinch of salt and black pepper.
  1. Cook the Eggs with Tomatoes:
  • Pour the beaten eggs over the tomatoes and peppers in the skillet.
  • Sprinkle grated Parmesan cheese on top.
  • Cover the skillet again and cook until the eggs set.
  1. Serve:
  • Sprinkle fresh parsley over the dish.
  • Serve hot as a delicious breakfast appetizer
