Ingredients:
- 2 tomatoes
- 3 eggs
- 1/4 bell pepper (🫑)
- 1/4 chili pepper (🌶)
- Salt and black pepper to taste
- Parmesan cheese (grated)
- A small amount of vegetable oil
Instructions:
- Prepare the Tomatoes and Peppers:
- Slice the tomatoes into circles.
- Heat a skillet with a drizzle of vegetable oil.
- Place the tomato slices and peppers (bell and chili) in the skillet.
- Cover and cook for a few minutes, then flip to cook the other side.
- In a separate bowl, whisk the eggs with a pinch of salt and black pepper.
- Cook the Eggs with Tomatoes:
- Pour the beaten eggs over the tomatoes and peppers in the skillet.
- Sprinkle grated Parmesan cheese on top.
- Cover the skillet again and cook until the eggs set.
- Serve:
- Sprinkle fresh parsley over the dish.
- Serve hot as a delicious breakfast appetizer
