Ingredients

100mlmilk
1tablespoonchopped parsley
1tablespoonchopped chives
1/4teaspoonfine salt

Instructions
Whisk eggs, milk, parsley, chives, salt and pepper in a shallow dish until the egg whites are fully mixed. Prepare bread and a plate for cooked slices.
Dip bread briefly on both sides, about10 seconds per side for sturdy slices. Lift and drain excess mixture. Adjust the dip for softer bread rather than soaking until it falls apart.
Heat half the butter in a skillet over medium-low to medium heat. Cook two slices for about3 minutes until golden underneath. Lower heat if butter browns rapidly.
Turn with a wide spatula and cook for about2–3 minutes more until the center is set and the egg mixture reaches160°F (71°C). Repeat with remaining butter and bread. Serve promptly without tightly stacking hot slices.
