Ingredients:
- 3 medium potatoes (boiled and cubed)
- 2 medium tomatoes (peeled and diced)
- 2 garlic cloves (minced)
- A handful of parsley (chopped)
- A small amount of oil
- 200 g ground meat (formed into small balls)
- 4 eggs
- Grated cheese (quantity depends on preference)
- 1/2 tsp cumin
- 1/2 tsp paprika
- 1/4 tsp black pepper
- 1/4 tsp ginger
- Salt to taste
Instructions:
- Prepare the Tomatoes:
- Boil the tomatoes briefly, peel them, and cut them into small cubes.
- Add a pinch of salt and set aside.
- Cook the Base:
- Grate the boiled tomatoes into a skillet with a small amount of oil.
- Once they start to cook down, add the boiled potatoes, spices (cumin, paprika, black pepper, ginger, and salt), and minced garlic.
- Stir everything together until well combined.
- Add Meatballs:
- Shape the ground meat into small balls and place them in the skillet.
- Cover and cook on medium heat for about 10 minutes.
- Add Eggs and Cheese:
- Crack the eggs over the mixture and sprinkle grated cheese on top.
- The amount of eggs and cheese can be adjusted based on the number of people being served.
- Finish and Serve:
- Garnish with chopped parsley before serving.
