Quick Potato Lunch Skillet

Servings: 4 to 5 people

Ingredients:

  • 3 medium potatoes (boiled and cubed)
  • 2 medium tomatoes (peeled and diced)
  • 2 garlic cloves (minced)
  • A handful of parsley (chopped)
  • A small amount of oil
  • 200 g ground meat (formed into small balls)
  • 4 eggs
  • Grated cheese (quantity depends on preference)
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • 1/4 tsp black pepper
  • 1/4 tsp ginger
  • Salt to taste

Instructions:

  1. Prepare the Tomatoes:
  • Boil the tomatoes briefly, peel them, and cut them into small cubes.
  • Add a pinch of salt and set aside.
  1. Cook the Base:
  • Grate the boiled tomatoes into a skillet with a small amount of oil.
  • Once they start to cook down, add the boiled potatoes, spices (cumin, paprika, black pepper, ginger, and salt), and minced garlic.
  • Stir everything together until well combined.
  1. Add Meatballs:
  • Shape the ground meat into small balls and place them in the skillet.
  • Cover and cook on medium heat for about 10 minutes.
  1. Add Eggs and Cheese:
  • Crack the eggs over the mixture and sprinkle grated cheese on top.
  • The amount of eggs and cheese can be adjusted based on the number of people being served.
  1. Finish and Serve:
  • Garnish with chopped parsley before serving.
  • Serve hot and enjoy this flavorful lunch dish!
