Honey Cumin Roasted Carrots
Oil-roasted carrots with cumin and a honey glaze added near the end. Cut the carrots into similar-sized pieces and judge doneness by tenderness rather than color alone.
A dairy-free carrot side with a late glaze
This version uses olive oil rather than butter and adds honey after the carrots have nearly softened. It is still a vegetable side, not a promise of a specific diet benefit or calorie level. The delayed glaze gives you a chance to judge carrot tenderness before the sugar spends much time in the oven. Cumin provides an earthy flavor; a modest amount leaves the carrot sweetness noticeable.
Cut for thickness, not just length
Carrots taper, so equal lengths alone do not ensure even cooking. Split thick ends into narrower pieces and leave slim sections larger. Aim for a similar thickness around 1–1.5 cm. Small whole carrots may work, but check the thickest part before glazing. Very chunky pieces need more roasting time than the clock printed in the card.
A roomy tray and two separate checks
Spread the carrots in one layer with space around them. A deep pile steams instead of roasting evenly. Check tenderness with a fork or the tip of a knife before adding the honey: the carrots should be nearly ready, not still hard in the center. After glazing, watch the surface color closely. Dark honey on the tray is not proof that a large carrot piece is tender, and burning it does not improve the dish.
Avoid a burnt glaze
Ovens vary, and honey can darken quickly where it collects on bare metal. Toss carefully to coat the carrots rather than leaving a puddle. If the glaze darkens before the carrots are fully tender, lower the heat and check more often instead of forcing the full additional time. Do not leave the tray unattended under a broiler; this recipe does not need one. A small squeeze of lemon after cooking can balance sweetness if desired.
Substitutions and dietary details
Maple syrup changes the flavor but can replace honey in a similar quantity; watch the glaze just as closely. Honey is not vegan and must not be given to infants under 12 months. There are no dairy ingredients in this recipe, but check packaged seasonings and other foods served with it if an allergy matters. Do not suggest adding bacon or pork-derived toppings.
Serving and storage
Serve beside beef, chicken, a grain bowl or another vegetable dish. Refrigerate promptly at 40°F/4°C or colder and use within 3 days. Reheat leftovers to 165°F/74°C, using gentle heat and watching the sugary coating so it does not burn. The surface may become softer after refrigeration; reheating is not a guarantee of the original texture.

Honey Cumin Roasted Carrots
Equipment
- 1 Large metal rimmed baking sheet, knife, mixing bowl and oven gloves
Ingredients
- 600 g carrots trimmed, scrubbed or peeled
- 1 1/2 tablespoons olive oil
- 3/4 teaspoon ground cumin
- 1/4 teaspoon fine salt
- 1/8 teaspoon black pepper
- 1 tablespoon honey
- 1 teaspoon lemon juice
- 1 tablespoon chopped parsley optional
Instructions
- Preheat the oven to 210°C/410°F. Cut the carrots into pieces about 5 cm long, splitting thick sections lengthwise so most pieces are about 1–1.5 cm thick. This helps thick and thin parts roast in a similar time.
- Toss carrots with olive oil, cumin, salt and pepper. Spread in a single layer on a roomy rimmed baking sheet. Roast for about 20–25 minutes, turning once, until nearly tender when pierced.
- Mix honey and lemon juice in a small bowl. Drizzle over the nearly tender carrots and toss carefully with a spatula. Return to the oven for about 4–6 minutes, watching closely because honey can darken quickly. Continue only until tender and lightly glazed.
- Remove from the oven and serve with optional parsley. Let the pan cool safely before washing. Refrigerate leftover carrots promptly in a covered container rather than keeping them warm on the tray for hours.
